Show Notes

In this special bonus edition of the beansandmore.coffee podcast, host Paddy welcomes listeners into the vibrant world of coffee culture. The podcast is a celebration of coffee’s impact on our lives, not just as a drink but as a connector of people and communities. Paddy emphasizes how baristas, the unsung heroes of local coffee shops, bring art and craftsmanship to every cup, making each visit a special experience. The podcast aims to capture this magic, sharing stories from coffee professionals and enthusiasts alike.

Paddy reflects on the podcast’s growth since its launch on Leap Day, with 13 episodes, visits to 10 coffee shops, and a growing community of 52 Spotify subscribers and 255 Instagram followers. He shares the excitement of celebrating International Podcast Day, noting how podcasts have become a powerful medium for connection and expression, reshaping the media landscape by offering diverse voices a platform.

The week’s other major event was International Coffee Day, supported by the International Coffee Organization (ICO). Founded in 1963, the ICO plays a crucial role in addressing global challenges in the coffee sector, from sustainable farming to international trade. Paddy highlights the ICO’s current five-year plan, which focuses on improving the global coffee industry through data, dialogue, and public-private partnerships. This year’s theme, “Coffee: your daily ritual, our shared journey,” resonates with the mission of the podcast: to celebrate the people behind each cup of coffee, from farmers to baristas.

Throughout the episode, Paddy revisits highlights from previous podcasts, including Episode 2, “Coffee is a Journey,” which set the tone for the series, and Episode 3, a vox pop episode where listeners shared what makes their local coffee shops special. He invites new listeners to catch up on these episodes via Spotify or Apple Podcasts, emphasizing the sense of community the podcast fosters among coffee lovers.

A fun feature of the podcast is its coffee shop theme tune question, where Paddy asks guests to suggest a song for their coffee shop playlist. This has grown into a shared playlist on Spotify, which listeners can access through links on the podcast’s social media.

Paddy encourages listeners to leave reviews and engage with the show by nominating their favorite coffee shops and baristas. He also teases exciting new developments on the horizon for beansandmore.coffee. The podcast’s rebranding marks the beginning of a broader venture into coffee culture, with plans for new products, experiences, and stories in 2025. Listeners can follow the journey on Instagram, X (formerly Twitter), and TikTok, or visit the website at www.beansandmore.coffee for more content and updates.

As Paddy signs off, he reminds listeners that the podcast is just the beginning of something bigger—a shared celebration of coffee and the community it creates. Exciting things are brewing, and there’s much more to come!

Show Notes — Episode 23: Critical Process Parameters This episode of Beans & More slows things down and gives the time that was needed. We travel to Donaghmoyne, just outside Carrickmacross, to meet Aidan and Kim Carroll, founders of the coffee trailer Bean There, Ate That. From the outset, this is not a quick coffee conversation — it’s a story that deserved to be told fully and without rushing. At the heart of the episode is Kim’s journey: a sudden and aggressive liver illness, months in hospital, long periods of waiting, and ultimately the gift of a life-saving liver transplant. Aidan speaks candidly about living with uncertainty, protecting their young daughter, and the emotional toll of waiting for news that could change everything. It’s an honest, deeply human conversation marked by vulnerability, resilience, and quiet hope. Out of that experience came clarity. Fear began to loosen its grip. Ideas once held back no longer felt too risky. We reflect on seizing the moment and how that shift was echoed around them — Kim’s father stepping into retirement, and her brother taking the courageous leap of opening GRA in Dublin, choosing purpose over security. The coffee trailer itself becomes a symbol of that turning point: a new chapter shaped by gratitude and courage. Alongside the story, we talk coffee in a grounded way — consistency, care, and why they chose Greenbean’s Supremo blend — with lighter moments too: secret-menu favourites, iced hot chocolate for local kids, and the joy of properly meeting neighbours for the first time. A central thread of the episode is community and a powerful encouragement to promote organ donation. Kim’s life continues because another family said yes, and this episode gently invites listeners to have that important conversation with their loved ones. What makes the perfect cup of coffee? According to Geison, manager and quality supervisor at Søren & Son, Dean St., Dublin 8 — it’s simple: the perfect coffee is the coffee you like. In this episode, Geison shares his remarkable journey from life as a lawyer in Brazil to becoming one of Dublin’s most passionate advocates for coffee quality. After a life-changing accident and a long recovery, he found purpose behind the counter — bringing precision, warmth, and a touch of soul to every cup. We talk about the art of consistency, the magic of human connection, and why good coffee and good company can transform even an ordinary morning. There’s a flat white made with Sumo Coffee, a few spilled-milk stories, and a soundtrack that swings gently from Bossa Nova to B.B. King. ☕ Honest talk. Heartfelt craft. 🎙️ Your Coffee, Your Way — because perfection tastes personal.

It’s been a while since our last episode — life got busy with An Trucail, my evening coffee cart in Drogheda, and the chaos of a house renovation. But on International Coffee Day, it feels like the perfect moment to return to the mic.
